You can’t keep Soph out of the kitchen! With self-isolation during the Coronavirus pandemic, keeping the kids busy and calm has been my number one priority. The kitchen is always a happy place for us, so we decided to use the Betty Crocker Super Moist Vanilla Cake Mix and spread a little hope with these delicious cupcakes.
So why a rainbow? Rainbows have helped families cope around the globe during the pandemic – a movement to spread a little hope inspired by the children and families in Spain and Italy (and now a global movement that we joined in South Africa too), where children created pictures of rainbows and stuck them onto their windows at home so passing families could spot the symbol of hope and provide a little cheer and a feeling of connection during these isolating times.
