Yummy Chocolate Coconut Slices

The simplest of bakes, this delicious recipe was passed onto our family by a dear friend, Janet, years and years ago – I can’t believe it’s taken me this long to bake it for my own children. The perfect tea-time treat or lunch box filler, these bars keep well, although they’ll disappear faster than you can say ‘kids, they’re ready!’.

Chocolate Coconut Slices

Base:

125g butter

½ cup brown sugar

1 cup desiccated coconut (plus some extra for sprinkling on top)

½ cup fall purpose flour

1/3 cup self-raising flour

1 tbsp cocoa

1 egg

Icing:

1 cup icing sugar

1 tbsp cocoa

1 tsp soft butter

Roughly 1 tbsp milk

 

Method for base:

Melt butter over a low heat, stirring in everything, lastly adding the beaten egg.

Spread over the base of a greased or lined lamington tin and bake at 180° for 20 minutes, until just firm to the touch.

Method for icing:

Sift together icing sugar and cocoa. Stir in butter and milk, forming a thick paste.

Spread icing over the base as soon as it is removed from the oven, allowing it stand for 10 minutes, then sprinkle with toasted coconut chips or more desiccated coconut. Cut into slices and allow to cool in the tin.

Easy peasy, right? Now time to taste them!
