  5. #MyPastaDream is Recco Pasta modeled around PRIMI World’s dish, it’s a curry-infused Napoletana with garlic and fresh chilli, rounded off with cream and garnished with fresh coriander. It’s perfection with fettuccine as the sauce love it, but you can use any pasta. It can be enjoyed as a vegetarian dish or by adding lightly fried Prawns, chicken or both or mini meat balls.

    Ingredients:
    Any meat should be (season with salt and pepper and then lightly fry til they’re just cooked)
    2 garlic cloves, crushed
    1tsp each of salt, sugar
    At least 1 tsp dried origanum (you might prefer to add more)
    A generous tsp of curry powder to start and then once I’ve added everything else I usually add more – I like the curry flavour to be quite prominent
    A glug of oil
    A couple of curry leaves
    1 packet / jar of tomato pasta sauce (tomato and garlic flavour is best, otherwise your flavour changes a bit)
    1 tin / packet of tomato paste
    250 ml fresh cream
    A couple of fresh green chilli’s sliced up or jar of crushed chilli.
    And a generous handful or two of coriander (this is also dependent on taste)

    Instructions :

    Once you’ve cooked your chicken, prawns or mini meat balls (or you can leave this out entirely and just make the sauce). Heat up some oil in a large pot, add in the fresh garlic, curry leaves and a little bit of the fresh chilli (depends on your taste with the chilli you can leave it out completely and serve on the side or if you have a jar of crushed chillies )Once heated through and you can smell something delish pour in the pasta sauce, add the sugar and salt as well as the tomato paste.
    Cook this for a while until it starts to bubble slightly, but don’t let the bottom burn. Add 1 tsp of curry powder to start, cook this for a few minutes and taste, see what you think if you’re happy with the flavour then don’t add more. But I usually find it needs a bit more curry powder. Remember to add in smaller batches and cook it for a few minutes before adding more.
    Finally add in the cream and mix it all together, cook for a few more minutes before you add the chicken, prawns or mini meat balls(if you’ve using it). Wait until your chicken is heated through before you serve on pasta.
    Add coriander when you serve – I serve fresh coriander and a jar of crushed chillies and enjoy.

    Chocolate Pasta:
    * 2½ cups all purpose flour
    * ¼ cup unsweetened cocoa powder.
    * ¼ cup powdered sugar
    * Pinch of salt
    * 3 large eggs
    * 1 tablespoon chocolate syrup
    * 1 teaspoon vanilla

    Chocolate hazelnut cream sauce
    * 1 cup heavy cream
    * 1 cup hazelnut spread
    * Pinch of salt
    * 1 small Peppermint Crisp bar, chopped

    For the pasta: Sift together flour, cocoa and sugar. Add a pinch of salt and mound the flour mixture in a large bowl.
    Hollow out the centre, making a well in the middle off the flour with steep sides.
    Break the eggs into the well. Add the chocolate syrup and vanilla. Gently mix with fork.
    Gradually incorporate the flour by pulling in the flour from the sides of the well. As you incorporate more of the flour, the dough will start to take shape.

    Knead the dough on a clean work surface until it becomes smooth, about 8 minutes.
    Shape into a disc, cover with plastic wrap and rest in fridge for 30 minutes.
    Divide dough into quarters and work with one piece at a time.
    Flour each piece lightly, shape into a rectangular shape and put through a pasta sheeter attachment starting at the widest setting.
    Then run the pasta through the sheeter attachment once on every number stopping at 5. Lightly flour the rolled out pasta sheet and fold in half.
    Take a knife and cut into ribbons, then unravel the ribbons and place on floured baking sheet to keep from sticking.

    For the sauce: Bring the cream to a simmer in a saucepan over medium heat and stir in chocolate hazelnut spread. Add a pinch of salt and continue whisking until the sauce is creamy. Remove from heat and add the chopped peppermint crisp bar.

    Cook the chocolate pasta in a large pot of boiling water, 3 minutes.
    Immediately remove the pasta from water and toss gently with the sauce.
    Enjoy

    Roasted vegetable Pasta, roasting adds more flavour.
    Prep Time 15 min
    Cook Time 15 min

    Ingredients:
    3 Tbsp Canola oil
    2 tablespoons chopped fresh parsley or coriander.
    zest of 1 lemon
    1 small red pepper, seeds removed and cut into thin strips
    1 small green pepper, seeds removed and cut into thin strips
    115 g button mushroom, halved
    8 cherry tomatoes, halved
    350 g pasta shapes
    A little salt and pepper

    Directions
    In a small bowl, mix half the oil with the parsley and the lemon rind. Set aside.
    Toss the pepper pieces in the remaining canola oil and arrange, in a single layer, on a baking tray. (Line tray with baking paper or foil for easy clean up.)
    Cook in a preheated oven at 200°C, 180°C fan for 6 to 10 minutes.
    Add the mushrooms and tomatoes to the peppers, toss with a Tbsp oil and cook for a further 5 minutes.
    Meanwhile cook the pasta following packet instructions and drain or since fresh because of my Philips Pasta Maker until al dente.
    Toss the hot pasta with the roasted vegetables and the herb-and-lemon mixture. Season to taste and serve immediately.

    You can add Quorn pieces or Frys schnitzel cut in strips or paneer, you can also add any other veg like green beans or carrots in julienne strips or stir fry mix to make it easier. Enjoy

    Beboti pasta with chutney sauce

    For the pasta
    * 400g cake flour
    * Pinch of salt
    * 4 eggs
    * 20 ml ground tumeric

    For the meatballs
    * 500g mince
    * 45 ml mince seasoning
    * 10 ml oil

    For the omelette
    * 3 eggs
    * Salt and pepper
    * 5 ml butter

    For the sauce
    * 15 ml oil
    * 90g onion, chopped
    * 5ml garlic, chopped
    * 5ml corn flour
    * 180ml peach chutney
    * 375ml cream
    * Salt and pepper

    For the pasta, blend the flour and salt in a food processor.
    Whisk the eggs and tumeric together.
    Add it to the food processor with the flour mixture and pulse until crumbly.

    Turn the mixture out onto a clean surface and bring dough together with your hands.
    Knead it lightly for a few minutes until smooth and pliable.
    Form the dough into a disc, cover with plastic wrap and refrigerate for 30 minutes.
    Devide the dough into 4 pieces and roll out one piece at a time, using a pasta maker.
    Roll it through the machine from the thickest setting to the third thinnest setting.
    Using a pasta machine attachment cut the dough into spaghetti strands.

    For the meatballs use your hands to mix the mince and seasoning together.
    Form the mixture into meatballs.
    Fry meatballs in a large pan with oil.

    For the omelette whisk the eggs together and season lightly,
    add the butter to a pan over medium heat.
    Add the egg mixture and cook for 2-3 minutes until the omelette is cooked through.
    Slice into thin strips.

    For the sauce heat the oil in a pot over low heat.
    Add the onions and garlic and saute, 5 minutes.
    Whisk in the cornflour, chutney and cream and turn heat up to medium.
    Simmer for 3-5 minutes until slightly thickened, and season to taste.

    Heat a large pot of salted water over medium heat.
    Once boiled, add the pasta and cook for 3 minutes.
    Strain and add it to the hot chutney sauce.

    Top it with some meatballs and scatter a few omelette strands on top.

  59. Gosh I think I was an Italian in my previous life … or should have married someone with an Italian Mom 🙂 I LOVE pasta. I would make a creamy pesto pasta … sooo easy. fry some finely chopped onion and garlic, add about 4 teaspoons (or more) of pesto, a tub of cream and a spoon of balsamic vinegar. let it simmer a bit and add your freshly made pasta and VOILA! #MyPastaDream

  62. Having a family of seven who would eat pasta 7 days a week if they could, would be absolutely possible with the pasta maker. I would love to make either a lasagne or cannelloni dish from scratch for them.
