We’re continuing with our Instant Pot Pantry Staples series (last week I shared our favourite Instant Pot Bolognese) during this nationwide lockdown and this week, to suit the weather in Joburg, is a Chickpea & Cauliflower Coconut Curry! Honestly, I don’t buy a lot of tinned anything. Generally I only keep tinned tomato, cannellini beans, kidney beans or chickpeas – that’s it. No baked bean fans in this house I’m afraid.
This is a super easy and totally meat free dish, in fact it’s dairy-free too, and the perfect warm lunch or quick supper. With the cauliflower and coconut milk, it is a dish that needs extra salt as it’s fairly sweet on the palate, so I find a generous squeeze of lime (or lemon) juice really lifts it, along with fresh coriander. Once again, the Instant Pot saves the day and packs this dish full of flavour.
