My go-to Cookie!

A delicious walnut and chocolate chunk cookie – how does that sound?! I had so many people asking for this recipe after I made them with Soph for back-to-school lunch box treats last week that I decided to share the recipe here.  After tearing the recipe out of a magazine years ago, it’s become a staple in our home, and I’m sure it will be in yours too. The best part? It makes a load – more to eat or share, you decide! You won’t look back!

Walnut and Chocolate Chunk Cookies

1 cup butter, softened

2/3 cup granulated sugar

1 cup light brown sugar

1 1/2 teaspoon bicarb

1 teaspoon fine sea salt

2 teaspoon vanilla

2 large eggs, room temperature

2 3/4 cups all purpose flour

100 – 150g walnuts chopped

150g slab of Cadbury Dairy Milk Chocolate chopped roughly into chunks

Method:

Preheat your oven to 170°C, and grease two baking trays (you’ll be making multiple batches).

Beat the butter and sugars with an electric mixer on medium speed for 2 minutes until the mixture becomes fluffy and lightens in colour.

Beat in the eggs, vanilla and bicarb, mixing for a further 1 minute, on a low speed.

Gradually add in your flour, mixing until combined, and then tumble in the walnuts and chocolate chunks, mixing by hand.

Drop a tbsp sized ball of dough onto your greased tray at a time, with lots of space between them as they spread out and then bake for roughly 11 minutes. Allow them to cool on the tray for two minutes before moving to a wire rack to cool.

These cookies are both crisp, but chewy, with the perfect surprises of the walnuts and milk chocolate chunks. Yum! Let me know if you bake them and what you think!
