When M&M’s launched their brand new limited edition salted caramel variety I knew two things – I had to get my hands on some, and needed to bake something with the world’s most shareable snack.
With the kids on holiday, I left the decision up to them – they chose to bake a chocolate cookie loaded with these candy coated salted caramel centres, and of course decided to add on some of the original M&M’s as well as some chocolate chips for good measure – I mean, if not, why not? The result? An irresistible cookie creation, perfectly paired with a cold glass of milk – according to Oli and Soph.
Chocolate M&M’s Cookies
¼ cup butter, softened
¾ cup brown sugar
1 tsp vanilla
1 cup flour
½ tsp bicarbonate of soda
¼ tsp salt
To top the cookies:
M&M’s of your choosing (keep in mind a large portion will be guzzled in the making of these cookies)
Pre-heat the oven to 180°C and line a baking tray with parchment if you don’t have a silicone mat.
Beat the butter and sugar for 1 minute, and then combine the egg and vanilla, mixing for a further minute.
In a separate bowl, combine the flour, bicarb, salt and cocoa. Gradually add the dry mix into the wet ingredients, mixing with a spatula. The double will be dry – don’t be tempted to add any liquids.
Use an ice-cream scoop to drop scoops of dough onto your lined tray and then press your M&M’s and chocolate chips all around the cookie balls.
Bake for 9 – 11 minutes and let the cookies cool on the hot tray for 15 minutes before moving them to a cooling rack.
