Baking with Soph – Pillsbury Rocky Road Easter Brownie Bars

If you’re looking for an Easter bake, look no further! Chewy, triple chocolate brownie bars topped with hard candy shell eggs and speckled eggs, what more could you want?!

Soph and I had such fun with this simple bake, she got to bash the eggs with her little rolling pin, steal a dozen mini marshmallows and decorate the brownies with the brightly coloured eggs, all while dressed in her Easter Best.

These make the perfect little treat to add into a lunch box, send to school for a teacher or a classmate, or ideal for after your Easter Sunday hunt.

Ingredients:

1 x box Pillsbury Triple Chocolate Brownie Mix

(15ml Water, 65ml Oil, 2 Eggs)

½ cup of Walnuts, roughly chopped

1 x packet speckled eggs

1 x cup mini marshmallows

6 x Mini Bantam hard candy eggs (or three big ones), bashed roughly in a ziplock bag with a rolling pin

Method:

  1. Mix up Brownie Mix, Eggs, Oil and Water as per box instructions.
  2. Add your crushed walnuts and mini marshmallows into your Brownie Mix and stir well – the marshmallows will melt into the mixture making it extra chewy.
  3. Pour the ready Brownie Mix into a greased baking tin and bake as per box instructions, with 3 minutes to go, pull out the tray (mind how hot it will be!) and gently press the crushed eggs and speckled eggs into the brownie mixture.
  4. Once baked and cooled, cut into squares. This make the perfect little gift to package up for a teacher or classmate, or something to enjoy with a cup of coffee after an early morning Easter Egg hunt!
