Baking with Soph – Pillsbury Rainbow Birthday Cupcakes

Last month we got to celebrate our little baker’s birthday! We decided to make some colourful Rainbow Cupcakes from a Pillsbury Moist French Vanilla Cake Mix by simply adding in some colour-popping gel for her school birthday ring!

Naturally, given the choice, Sophie chose pink, purple and turquoise to form the three coloured cake batters, and then a plain Ready-to-Spread Vanilla Flavoured Frosting to swirl on top, with a ‘generous’ sprinkling of her favourite confetti sprinkles.



1 x box Pillsbury Moist Supreme French Vanilla Cake Mix

(205ml Water, 125ml Oil, 3 Eggs)

2 x tubs Pillsbury Ready-to-Spread Vanilla Flavoured Frosting

3 x different food colouring gels or liquids

Sprinkles to decorate



  1. Mix up Vanilla Cake Mix, Eggs, Oil and Water as per box instructions.
  2. Divide the ready Cake Mix into three separate bowls adding colouring to your liking.
  3. Prepare your muffin pan with a medium-sized paper cupcake case into each hole and then add in three teaspoons (one of each colour Cake Mix) to each case, filling the cupcake cases no more than ½ way and bake as per box instructions.
  4. Once baked and cooled, fill a piping bag with the Pillsbury Ready-to-Spread Frosting that has been slightly chilled (use whatever piping tip for your desired effect, I chose a wide tip, and used two tubs of icing to make 24 cupcakes, which the one box provided) and ice your cupcakes. To finish off, sprinkle with your sprinkle of choice – there you have it, fabulous Rainbow Birthday Cupcakes – perfect for a school birthday ring or a birthday tea at home!

Soph had such fun baking her very own Birthday Ring cupcakes, and was pleased as punch at the end result, making her special day all the sweeter! Thank you, Pillsbury, for showing us absolutely anyone cake bake!
