You haven’t lived until you’ve pressure cooked – my new outlook on life – but ask anyone who uses one, it’s incredible. My Instant Pot has opened a whole new world in the kitchen for me, providing faster, tastier meals without me having to keep checking and stirring a pot!
I plan our meals weekly, leaving the weekend up to chance, or whim. I find it a lot less stressful knowing what I’ll be making during the week, with jam-packed afternoons of extra murals, events, homework, housework and trying to carve out some time to catch up on Oli and Sophie’s day at school. I need something quick, tasty, healthy, but most importantly easy for weeknight meals. So, here are three of my family’s favourite weeknight dishes, all done in the Instant Pot.
First up, the most delicious vegetarian option – a Broccoli & Cheddar Quiche. This crustless quiche has been such a hit – served with a simple side salad for dinner, but also as a leftover for breakfast!
We honeymooned in Thailand, and one of the things I loved most about the trip was the incredible cuisine. This Peanut Chicken is so tasty – you can taste the coconut in the tender chicken and it’s the perfect balance of salty, sweet and sour. Soph calls it Peanut Butter Chicken Spaghetti – hey, who am I to correct her – it almost is! I serve ours with egg noodles, but you could swop that out with some steamy jasmine rice or even some zucchini noodles.
Lastly, probably the most frequently made dish in my Instant Pot – our favourite, Chorizo and Tomato Risotto. It’s the easiest dish ever, it’s never failed me and unlike having to repeatedly stir on a stove top – this is absolutely no fuss!
